Kale Chips

Okay, I'm jumping on the bandwagon.  Ethan LOVES these.  He gobbles them up and always asks for more.

1) Take one bunch of kale (I used baby kale) and wash, dry, de-stem, and cut to bite sized pieces.
2) Toss with olive oil and salt.
3) Bake at 175 F for 15 minutes.

You can also do these with root vegetables such as sweet potatoes or parsnips.  Funnily enough Ethan does not like the sweet potato chips or fries.  But any kind of leafy green in chip form he will devour!
